Ingredients

2 ripe avocados, halved, peeled, pitted and sliced
1/3 cup pomegranate seeds, divided
1/3 cup diced red onion
1/3 cup lime juice
1 jalapeño pepper, seeded and diced
2 tbsp finely chopped fresh cilantro
1 tsp each salt, pepper and ground cumin
4 cups vegetable crudités
1/2 bag (20 oz bag) tortilla chips

Directions

  1. In mixing bowl, lightly mash avocados. Stir in 1/4 cup pomegranate seeds, red onion, lime juice, jalapeño, cilantro, salt, pepper and cumin.
  2. Transfer avocado mixture to serving dish. Sprinkle remaining pomegranate seeds over top. Serve with vegetable crudités and tortilla chips.
  3. Tip: Use your favorite veggies for crudités, such as carrots, celery, cucumbers, peppers, radishes or grape tomatoes.
