2 tbsp olive oil
1 cup diced red pepper
½ cup chopped onion
1 cup chopped asparagus
2 cups fresh spinach
1/2 cup shredded cheddar cheese
8 large eggs
1/2 cup half and half or whole milk
Salt and pepper to taste


Preheat oven to 350 degrees. In a 10-inch cast iron skillet, heat and add oil. Add onions, red pepper and asparagus. Sauté 5 - 7 mins. Add spinach and cook for a few minutes. Meanwhile, whisk eggs, half and half, cheese and salt and pepper in a mixing bowl. After veggies have softened, add egg mixture to pan. Cook (without stirring) for 5 minutes. Transfer skillet to oven and bake for 20 minutes or until set. Serve warm.
